How to Make Rich and Spicy Sundubu-jjigae – My Husband’s Favorite Recipe

Hello everyone~
Today, I made a rich and spicy Sundubu-jjigae (Korean soft tofu stew) that my husband had been craving for days.
It may look complicated, but if you follow the steps carefully, you can easily make a deep and flavorful stew without fail 😊


🛒 Ingredients – A Hearty Meal for the Family

  • 2 packs of soft tofu
  • Ground beef (or pork)
  • Onion, zucchini
  • Green onion, Cheongyang chili peppers
  • 4 eggs
  • 2 tbsp soy sauce, 2 tbsp anchovy fish sauce
  • Korean red pepper powder (for chili oil)

Personally, I enjoy using beef, but I think pork gives the broth an even richer flavor. Feel free to choose whichever you prefer!


🔥 Making the Oil – The Secret to Deep Flavor

First, heat some oil in a pan and add finely chopped green onions to make scallion oil.
Once the aroma starts to come out, add Korean red pepper powder to create a spicy chili oil.

This step is the most important part for creating the rich and flavorful broth of Sundubu-jjigae.


🥩 Stir-frying the Meat and Vegetables – Deep Flavor Without Stock

Once the chili oil is ready, add the prepared ground beef and stir-fry it.
When the meat is partially cooked, add 2 tbsp soy sauce and 2 tbsp anchovy fish sauce for extra umami flavor.

Next, add the onion and zucchini, and stir-fry everything together until well combined.


💧 Let It Simmer – Time for the Soft Tofu!

When the ingredients are nicely cooked, pour in just enough water to cover everything.
Once it starts boiling, gently add 2 packs of soft tofu in large chunks.

Then add extra green onions and Cheongyang chili peppers for more heat and flavor, and let it simmer a little longer.


🥚 Final Touch – Add Plenty of Eggs and Simmer for 10 More Minutes

The finishing touch of this stew is definitely the eggs!
Since my family loves eggs, we added 4 eggs generously.

Let the stew simmer gently for about 10 more minutes, and your comforting bowl of Sundubu-jjigae is complete!
